The fishskin is used as the main material of the dish. Remove sand from a sharkskin, and cut it into small pieces. Stew the cut skin with garlic put in as a seasoning. The finished dish, with soft sharkskin, strong garlic flavor and thick soup, tastes good. It is one of the main courses of Wenzhou Cuisine banquet favored by Wenzhouese.


It is stated in the Compendium of Materia Medica, an orthodox ancient book on Chinese medicine,  that “The sharkskin...is a delicacy, and eating it benefits human beings”, and “it has functions of detoxication and insecticide, and can cure human consumptive diseases.”
