The Small Clam (Moerella iridescens) is a small whitish sea product, something like pumpkin seeds in size and shape, inhabiting at seaside tidal areas. When the small clams are caught, they contain mud and sand. Put the clams in light salt water, and let them stay in it half a day to let the impurities out. Then take the clams out of water, and wash them thoroughly with water once more. Then drain the water and place the clams in a container. Put a small amount of oil in a pot over a fire, and then put small clams in. Fry them over a high temperature flame, put chopped green onions, ginger slices, salt or soy sauce in the pot, and go on frying till their small shells slightly open, when the clams are taken out of the pot and put on a plate for eating. The fried small clam meat is tender and amazingly fresh. It is an ideal delicacy to accompany your wine drinking.
